Honey Vanilla Cupcakes with Fig Buttercream 3

Sometimes the game plan for my baking week is thrown a monkey wrench. A monkey wrench shaped like a fig. At my job, they had too many figs. Why you ask? I’m not sure, I don’t ask questions, but if the figs weren’t eaten, the figs would be trashed.  So I asked my chef permission to take them home and bake with them, and permission was granted. So I ended up at home with 32 oz of fresh figs! And since I love figs, I was excited to start concocting ways to use them in my baking world. Needless to say, I crushed it.

Did you miss me? A week can fly by so fast, and there can be so many goals in that week. And then with a heavy day job schedule, auditions, and an epic game night that went much later than intended, all of a sudden, you’re our of days to post.  At the end of the week, I tried not to beat myself up too much about it because sometimes, you just need a minute. And besides, the things I have planned for this week will surely convince you to forgive me.

I hope everyone had a great Superbowl weekend! I am not a diehard fan of either team (I’m a Falcons fan, so bust out the sad trombones), so stepping into a household that lives and dies by the orange and blue was a very fun experience. But what’s just as important as the game is what everyone is eating during that game. So we had our first annual Dip-Off.  First prize = $50. I decided to go against the cheddar and ranch grain and make a dessert dip for my entry. A mint cookie dough dip with homemade chocolate wafers, basically create your own Thin Mint.

It did not disappoint.
