Tropical Mug Cake Domestic Batch

The time has finally come! It is the final Mug Cake! (for now!) I held off making this one because a tropical mug cake would go so well with all the recipes I shared this week! So here’s the grand finale, a mug cake using coconut and pineapple and a touch of rum, because why not. I’ve had a lot of fun making these, going through the book and seeing what each new week would hold.  I love how easy they are to make.  I do think some of them are too dense and I encourage you to cut anywhere from 1/2 – 1 tbsp  of flour from the recipe for a more moist cake.  But use your judgement, if the batter looks too wet, add flour, it’s always easier to go forward than back.

Pineapple Cherry Popsicles| Domestic Batch

Who has the tolerance to put things in an oven in this heat???? Well gladly you don’t have to. Go invest in a popsicle mold.  Like this one.  And you can have frozen treats all summer long.  I had some cherries and pineapple sitting around so I threw them together to make a refreshing summer popsicle. Frozen fruit is the best!!! It’s such a great option to cool off when you want something sweet but even the thought of working with dough or batter makes you want to cry.  And by cry I mean sweat.  And by sweat I mean drip profusely from the time you wake up until you go to bed.  Oh wait you have central air? We’re not friends anymore.

Mango Tart | Domestic Batch

Ooooooo baby I wanted it to feel like summer and I GOT IT. As July is almost coming to a close it’s clear the seasons have shifted a little.  While May and June were cool and breezy, summer hasn’t even felt real until this past week.  It’s reared its sun-shiny head and we’re pushing the mid-90’s in the middle of the day. Being surrounded by buildings doesn’t give a lot of options for a cool down, so I take solace in wearing summer dresses, taking cold showers, and making super refreshing desserts that require no oven! This Mango Tart checks some pretty important boxes.  I’m all over this mango curd I made for the middle of the tart, and being able to freeze the crust instead of bake it makes this dessert even easier. And surprise surprise, I have an outfit to go with! Overdue right?
