A ‘Mini’ Post!

Have you ever had one of those weeks that was so busy you can actually account for every hour of every day, and it makes you tired even thinking about it? Whew.  That was the past 7 days.  While times like that can be fun, there is something really nice about having a normal day where you just crawl into bed like an old 31 year old at 10:30 pm and crash. Birthday festivities for me and others, a baby shower, my husband’s concert, it was all a blur, but we made it out alive. It was a fast paced, chalk full of activities kinda week/weekend, but now it’s back to a schedule and I’m on major detox.

I am so excited to pair, once again, one of my treats with an outfit, like my original manifesto!! Winter really pulled the rug out from under me with my original blog plan. I’m hoping as warm weather is consistently gracing NYC, I can give you posts with ALL the things!!

My first post ever was how I had ruined chocolate chip cookies, and this spurred me into baking and creating this blog and BLAH BLAH BLAH. Anyway, I’m revisiting the classic, but it’s my own recipe, and one added bonus, they’re mini!!!! This is something I created for a friend’s baby shower and I was overjoyed with the result, both on an aestheticand taste factor.  The result was precious little cookies that fit right into a tiny milk shooter! How cute is that???

Reasons I feel this was a success? 1 egg + 1 egg yolk. The extra yolk adds richness and fat.  Also, like most recipes, more brown sugar than white. Brown sugar has more moisture, also adding to the texture of the cookie.

 I made this recipe twice and it is a total winner.  Not to mention actual prep time is almost nothing. These cookies are so soft and yummy, and once dunked in a tiny glass of milk, you’re off to snack-time heaven. Just because it’s small doesn’t mean it can’t have big flavor.

I apologize for the lack of prep pictures.  I actually didn’t expect them to turn out as good as they did so I figured I’d take pictures on another go round. But then they were awesome so I took some result photos.  The second time I made them it was night and the lighting was awful.  You’ll have to just accept pictures of the final product.

I feel like at this point, at least half my wardrobe is made up of clothes from Stitch Fix. I was sent this skirt a while ago and I just love it.  I’m a polka dot gal, and this skirt is the perfect length without making me scared my tush is all out and about. I think it’s technically called a ‘swing skirt,’ but in my mind, I call it a mini since it doesn’t pass the knees.  It’s like a modest mini.

Now that the sun is shining, I love embracing bold colors and playing in the sunshine.  This is the time of year you sneak a bottle of rosé into Central Park and soak up the rays. This is no tights weather. It is glorious.

I rediscovered this coral blouse and I cannot wait to wear it all summer long. It’s great tucked in, but as it gets warmer, I love tying the bottom of it for a safe crop top.

I think I am in love with this skirt, and this whole outfit because it’s so wonderfully feminine.  Though it’s not posted much, I spend a lot of time in pants and skinny jeans when I run errands, or just headed out in chillier weather or I’m sick or wearing tights every day. But this outfit is just so light and flowy I feel like a summer mod queen.

My denim Gap jacket is one of the most frequent offenders in my spring and early summer wardrobe. It goes with everything, and when nights turn a little chilly, it’s a great piece to have.  A good quality denim jacket is a GREAT investment piece.

And I had to double up on the polka dots for my clutch. I think the neutral color scheme lets me get away with it, dontchya think?

A Mini Post!

Mini Chocolate Chip Cookies & Milk Shooters

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup light brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 egg yolk
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 2 tsp vanilla
  • 1/4 tsp salt
  • 1 cup mini chocolate chips
  • 1/2 gallon of milk (optional, for tiny shot glasses)

Instructions

  • In a medium bowl, whisk together flour, baking soda and salt, set aside
  • In a stand up mixer with a paddle attachment, cream butter and sugars together until light in color and fluffy (about 3-4 minutes)
  • Add in egg, egg yolk, and vanilla one at a time, allowing each to beat in completely before adding the next
  • Turn off mixer and scrape down the sides, add all of flour mixture
  • Turn mixer to low speed and allow dry ingredients to mix in, once just combined, add in chocolate chips
  • Dough is ready when it comes together and has picked up all the chips sitting at the bottom of the bowl
  • Cover bowl with plastic wrap and chill for at least 2 hours, but preferably over night
  • Once ready to bake, preheat oven to 375
  • Roll chilled dough into tiny balls, about 1″, but no more or they’ll be too big for the glasses
  • Place on lined baking sheet and bake for 10-12 minutes (11 was perfect for me), take out cookies and let them cool, they may look under baked!! Do not bake them longer!
  • Once cool enough to handle, move to wire rack to set, store in airtight container or place in mini shot glasses filled halfway with milk to have a tiny version of your favorite duo

    1. Honestly, I’ve been using a lot of outside social media platforms: Foodgawker, style gawker, Pinterest, and Yummly which have helped drive traffic ten fold to my blog.

  2. I’m honestly not sure which is cuter, you or this adorable cookies! JK, definitely you, but the cookies are so stinking cute, too! These are party/picnic perfection.
