New York cannot make up it’s mind. Like me at a pizza place, indecisive (because I want to eat everything). First New York is cold, then flat out warm bordering on hot, and then chilly again.  Over the weekend I had two days off in a row for the first time in…….months? Yes. Months. So there were a few projects in the oven for this week. 

I feel like the past few posts have had numerous steps that require a lot of patience, and time to do correctly. But buttermilk biscuits with a bit of a kick? Simple.  I feel like these biscuits fall in the same category as whipped cream, in the way that you’re used to having store bought, but once you make it yourself, you’ll never go back.

These biscuits are flaky, soft, and with the jalapeño thrown in, have a bite that wakes you up on a Sunday afternoon.

I don’t use a stand mixer for this recipe, I actually prefer not to. I serve them with home made sausage gravy from this recipe.  It’s filling and keeps your insides warm and makes you feel good about your decision not to go out to brunch and get drunk at 11am. Just get drunk on mimosas at home.

Lately, going out on the weekend has been uncommon with how crazy our schedules have been, and going out to brunch has been even more rare, so making these was a nice treat. It felt like we went out to brunch but instead, we stayed in, watched a little football and were content and all cozy on the couch.

So I don’t want to lie to you, I was cozy! And my outfit was uber cozy. Can you tell me keyword for this post is COZY?!  I went crazy and didn’t even put in my contacts. So you get a peak at my Warby Parker glasses. You also get a tiny peak into our apartment! We love our place, and you can see a bit of our living room and bedroom.

Have you heard of Warby Parker?? If not, for shame! They have affordable, attractive eye wear AND they donate a pair of glasses to someone in need every time a pair is bought.  So literally everybody wins.

These earrings are paper airplanes!!! Just the best. You can have simple but great details in even a casual outfit.  Not to mention my yellow watch, a little color goes a long way.

This shirt from Modcloth is the ultimate example of cozy.  It’s so soft it feels like you’re wearing a blanket. It has pockets! How could you not love this sweater, which also comes in a bunch of other colors on the site.

These jeans from BDG are my go to.  I love the dark wash, they fit like a glove, and I actually found them for cheap at a Buffalo Exchange a while back. If you really feel the need to get out of the house, throw some loafers or booties on with this outfit and you’re cozy AND appropriate for the outside world.

We splurged and got this platform bed from Crate and Barrel after our wedding this year, and what a great choice is was. It’s beautiful and sturdy. And what do you do with epic DIY monograms you used as your wedding center piece? You hang them on your wall above your bed and boom, instant decor and personalization.

Jalapeno Cheddar Biscuits

Ingredients

  • 2 cups AP flour (plus extra for workspace)
  • 1 Tbsp baking powder
  • 1 1/2 tsp salt
  • 1 1/2 sticks (12 tbsp) COLD unsalted butter, diced
  • 1/2 cup cold buttermilk
  • 1 large egg
  • 1 cup grated sharp cheddar
  • 1/2 cup diced jalapeño, deseeded and destemmed (about 2 medium jalapeños)
  • Corse sea salt to garnish, optional

Instructions

  • Preheat oven to 350
  • Gently mix flour, baking powder, and salt in medium bowl
  • Add diced butter (I add half) with pastry cutter and then add remaining, until small beads of butter are formed and consistent throughout
  • In a separate small bowl, beat together egg and buttermilk, keep a small amount to the side for egg wash
  • Pour egg and milk into dry ingredients and mix together gently to fully combine
  • Add in grated cheddar and jalapeño and mix with hands until evenly, but roughly combined
  • Dump out dough on floured surface and knead about 6 times
  • Pat out into disc about 1/2 inch thick and using a biscuit cutter (or the top of a glass), cut out about 5-6 biscuits
  • When there is no more room on dough to cut, combine scraps and pat out into another smaller 1/2 inch disc, continue this process until all dough is used
  • Place biscuits on non stick baking sheet, brush the tops with egg wash, sprinkle with a sea salt and bake for 20 minutes
  • They’re best warm, but keeping them in an airtight container and warming them up the next day is still tasty

P.S.

*When using the biscuit cutter (or top of glass), make sure to rub the edges in flour so it doesn’t stick to the dough
