Hanging on to Summer

Happy Labor Day everyone!!!! This is it.  The beginning of the end of summer.  In New York all anyone does is dream through the snow covered curbs for summer.  And then as soon as it gets here, they bitch about how hot it is.  Classic.  I will say this summer has felt like it’s making up for lost time.  The end of it has been humid and thick and kinda felt like a good ol’ armpit to walk around in.

Spending part of my childhood in Florida, the heat doesn’t usually bother me. I enjoy it, I’ll sweat it out. This year, this past month, surrounded in concrete, has been rough.

HOWEVER

What could give you more delicious relief and feel like an island getaway in your mouth than a key lime pie?

A few weekends ago we threw a surprise birthday party for a friend of ours. Since she didn’t have a lot of birthday parties growing up as a kid, we threw her an adult-child birthday (with the addition of booze), full of cone party hats, a piñata, and Smarties for everyone.  I made her a key lime pie with a graham cracker crust, one of her favorites.  It was a refreshing dessert and eaten with a summer beer in hand, everyone was happy…….and drunk.

Things I learned: Condensed milk looks gross, and thats’s that. And baking a graham cracker crust smells amazing in your apartment.  If you bottled that scent and sold it, I’d be the sucker to buy it.

I actually made two key lime pies, a slight variation in recipes to see which I liked better.  The recipe provided is taken from the pie I thought more successful. The other was almost too rich, this one has more lime oomph .

 I hunted at no less than five different grocery stores to find actual key limes to no avail, this pie was made with regular limes and tasted great.

The party was a huge success. And when you have an owl piñata, how could it not be?

Just like key lime pie screams summer to me, so do rompers.  I love a good one piece in the summer. Or in early September when temperatures are still sweltering. Rompers are easy to throw on, light, it’s a no think type deal.  The only downside…naked pee…amIright ladies? Despite that, they’re a hot weather win.  This one is a few years old but I bust it out at the beginning of every June and it’s still a hit.

I’ve worn these Francesca’s sandals out so hard.  I wear them everywhere, with everything. I love the colors and the tiny little heel on them. I’m obsessed with everything Francesca’s has.  Their clothes, their decor. I want it all.

And out of everything I own, this watch has received the most compliments of them all. Guys, it is a FOREVER 21 watch from the men’s department.  Secret’s out.  Men who wear $2000 suits tell me how much they love my watch.  IT’S $12. Go get it, hell, I’ll go get it for you. But also, I do love this watch. This Forever 21 romper is also linen, adding to the lightness of it. I’ll hold on to it for as many summers as I can.

Key Lime Pie

Ingredients

For the Crust

  • 1 1/2 cups crumbled graham cracker
  • 5 Tbsp melted butter
  • 4 Tbsp sugar

For the Filling

  • 2 14oz cans of sweetened condensed milk
  • 1/2 cup sour cream
  • 2/3 cup lime juice (about 4-6 limes)
  • zest of 2 limes

Instructions

For the Crust

  • Preheat oven to 350
  • Combine all ingredients and mix thoroughly
  • Spread into 9 inch spring form pan and pat gently against the edges and along the bottom with a spoon or the bottom of a glass
  • Bake for 6 minutes and let cool before adding filling

For the Filling

  • Keep oven at 350
  • Combine all ingredients and whisk until smooth
  • Pour into partially baked crust
  • Bake for about 10 minutes, until tiny pinhole bubbles begin to form on top
  • Allow to cool, and then chill for at least 2 hours, up to overnight

P.S.

*Don’t forget to zest your limes before you squeeze them, zesting the squeezed halves of used limes will be a pain in your tush
*You can totally use a pie pan if you’d like. I liked keeping the form with the spring form pan.
