And just like that it’s Friday! And I have a delicious Mug Cake for you. Now you look at this title and you’re like, what What WHAT is a financier??! Fair question, I didn’t know myself.  Well kiddos, it’s a traditional cake that is spongey and moist (there’s egg whites in there) and uses almond flour and has a nutty flavor.  Also adding ground hazelnuts in this recipe adds more fat to the cake and makes it super soft.  The extra touch of having white chocolate in the middle doesn’t hurt. I scraped the mug clean on this one too.  Financier’s were named so because traditionally they are created in a rectangular shape, which looked like gold bars.

Friday is upon us and I think I’ll make it a requirement that you HAVE to make this Mug Cake over the weekend.  Some of the these cakes are good, some aren’t great, and so far there have been a select few that are outstanding.  This is one of them.  I was scraping the bottom of the cup at the end, and was pretty bummed it was all gone. Also, if you have a nut allergy, sorry friend, this is your worst nightmare, just move along, nothing to see here.

Friday has come, and I have to say, I’m stoked to share this mug cake. One of the things I love about baking is when things surprise me, like when the texture or taste of something really blows me out of the water.  This mug cake has easily jumped to one of the top three I’ve made. It’s not as dense as some of the previous cakes, and the flavor is so rich throughout the cake you don’t even need a topping!
