We have made it through 2/3 of the summer! And also, rent is due! Go mail your checks and then come back for the rest of this post.  Not evicted? Great. Let’s continue. This is not a recipe for the traditionalist.  I got weird.  I decided to spice up some classic flavors to see if they worked. It was not my favorite thing that I’ve made, but it was not bad! It was just different……. I’m also featuring some funky printed pants that I still love to wear, despite being in my closet for close to two years. Sometimes, you just have to change up the traditional to keep life interesting.

Pineapple Cherry Popsicles| Domestic Batch

Who has the tolerance to put things in an oven in this heat???? Well gladly you don’t have to. Go invest in a popsicle mold.  Like this one.  And you can have frozen treats all summer long.  I had some cherries and pineapple sitting around so I threw them together to make a refreshing summer popsicle. Frozen fruit is the best!!! It’s such a great option to cool off when you want something sweet but even the thought of working with dough or batter makes you want to cry.  And by cry I mean sweat.  And by sweat I mean drip profusely from the time you wake up until you go to bed.  Oh wait you have central air? We’re not friends anymore.

I’ve eaten a number of slices of humble pie in my day, and it tastes like regret.  However, you eat some delicious sassy fresh cherry pie and it tastes like pure rockstar. There’s something about using fresh cherries that sets it apart from canned. I attempted a lattice crust, and it wasn’t a failure. This is a pie that I feel like I could set on a window sill and birds would steal it because it’s so delicious. 

Full disclosure: this is a post I’ve wanted to put up for a little while ago, but got distracted with other baking projects, continuously pushing this post further and further away. Not to mention that between balancing work, rehearsals, and marathon training right now, I’m pretty grateful I actually had this post on reserve, because I’ve had zero time to bake.  So truth be told, cherry season is very much over, but I still wanted to share this with you.  And you can search this post next year when cherries are BACK in season.
