So as I stated last week, the mug cake chapter has come to a close.  But as I’m ready to move on, this endeavor pointed out that I’ve been doing these for so many months, I  can actually have a countdown of the best ones.  There were plenty to pick and chose from and a lot of these cakes where very dense, some had sharp pops of flavor I couldn’t get enough of (resulting in a mug that was scraped clean), and some had ingredients that I think should never be put in a mug cake.  If I told you I remembered every bite of every mug cake I’ve eaten over the past several months I’d be lying. But the nice thing is I know I don’t lie in my posts. While I didn’t really shit-talk too many of these cakes, I was very clear and honest about the ones I loved.  And because of that, looking through my old posts, I created the list of top 5 for these individual treats. I hope you resvisit them, as I know I will when I need a snack or have a sweet-tooth dessert craving for one.

Tropical Mug Cake Domestic Batch

So here’s the grand finale, a mug cake using coconut and pineapple and a touch of rum, because why not. I’ve had a lot of fun making these, going through the book and seeing what each new week would hold.  I love how easy they are to make.  I do think some of them are too dense and I encourage you to cut anywhere from 1/2 – 1 tbsp  of flour from the recipe for a more moist cake.  But use your judgement, if the batter looks too wet, add flour, it’s always easier to go forward than back.

The home stretch of Mug Cakes continues. There will be one more after this, then perhaps a Top 5 recap to buy me some time for a new series and then onto a new weekend chapter. My friend Lori suggested replacing Mug Cakes with cocktails, which I’m a big fan of, but I need to stock my bar a little better.  Otherwise, you’re all get gin and tonic recipes every week with an occasional bourbon on the rocks thrown in.
