The Weekend ReTREAT: Pear Mug Cake

Happy Friday! Remember when I said I had all these great posts from snowpocalypse and then posted NOTHING? Fun right? Well they’re coming, I promise. But let’s stay consistent with another mug cake.

And in a Dharma Initiative mug no less. (The Constant will always be the best episode amiright?)

Pear Mug Cake

Ingredients
  1. 1 oz butter, melted
  2. 1 egg
  3. 2 tbsp granulated white sugar
  4. 1 tsp vanilla extract
  5. 1 tbsp light cream
  6. 6 tbsp AP flour
  7. 1/2 tbsp baking powder
  8. 1 tbsp sliced almonds
  9. 1/2 pear peeled and deseeded
Instructions
  1. Place half of pear in a small bowl with 1 tbsp of water and cook in microwave for 1 minute 10 seconds, set aside
  2. Melt butter in microwave, set aside
  3. In a microwave safe mug, add egg, sugar and vanilla and beat together with fork until combined
  4. Add cream, flour, baking powder, almonds and butter, one at a time, beating each in before adding the next
  5. Take your half pear and push it into the middle of the batter, sprinkle more sliced almonds on top
  6. Microwave for 1 minute 40 seconds and allow to cool slightly before enjoying
Notes
  1. *I chose not to top this guy, but feel free to do icing, Nutella, or melted white chocolate on top
  2. *I think this cake is a little but of a cop out, if you want to make it a little more intense, I would recommend shredding the pear on a cheese grater and adding it in last (beating it into the batter) before microwaving, so the pear is easier to obtain in each delicious forkful
