The Weekend ReTREAT: Vanilla Mug Cake

I promised a new series on the blog and here it is! So the things I hear from people, friends, coworkers when I talk to them about baking is that it’s too hard. First off, it is NOT! Fie on your doubtful thoughts because while it may require some patience, or some paying attention (but not too much considering I often enjoy an adult beverage as I do it), it is completely attainable.  

I also have people ask what I do with my baking creations. A lot are specifically baked for special occasions, and usually i just pawn off the rest on friends and coworkers.  But what if you don’t have a holiday or party to bake for? Or you hate your coworkers and they don’t deserve your amazing creations?! I get it. That’s why I’ll be presenting the Mug Cake Series.

I wish I could claim this idea as my own. But one day as I meandered through Urban Outfitters I saw this recipe book and I couldn’t help but buy it.

And I thought about myself and others who want just enough dessert without leftovers that will go bad. So I will go through this book. And together we will enjoy winter one weekend at a time with just enough dessert while you watch the Making of  a Murderer or The Bachelor or Downton Abbey or read a book or finish some crosswords. So cozy up on the couch and enjoy a mug cake!

Vanilla Mug Cake

Ingredients

For the Cake

  • 1 slice of butter 1/2 inch thick, melted
  • 1 egg
  • 2 Tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 Tbsp light cream
  • 5 Tbsp AP flour
  • 1/2 tsp baking powder

For the Glaze

  • 4 Tbsp confectioners sugar
  • 1 1/2 tsp water
  • sprinkles or shaved chocolate or any other topping of your choice

Instructions

  • Place egg and brown sugar in mug and beat together with fork
  • Add vanilla, light cream, flour, baking powder, and melted butter one at a time, beating in each with a fork before adding the next
  • Place in microwave for 1 minute 40 seconds
  • Allow to cool only slightly before adding glaze and enjoying
  • Mix together confectioners sugar and water until no lumps remain
  • Drizzle on top of cake, add topping and enjoy!

P.S.

*Make sure your mug is microwave safe!!! ….because my first one was not and luckily caught it in time
*This cake was a little dense, in following recipes I may add a little sour cream or a touch of heavy cream to make it more moist
*All in all, a pretty tasty single dish
