Happy Weekend for real!!! It is the heart of Saturday and over the weekend I am prepping and making some great America themed treats to share for next weekend. Fourth of July is a great time to spend with family or friends and enjoy the sun and the hot dogs and burgers and cake and pie and cookies and coleslaw and….where was I? Oh god I love food.

To get you all ready for next week and the impending weekend to follow, I’ll start you with a Mug Cake that really sets the tone. Nothing is more American than Apple Pie, so how about a mini version? This Apple Crumb Mug Cake is a great snack if you’re having a craving for the classic treat but only have about 10 minutes to make and enjoy it.

The recipe in the book where I adapt these from was so off when it came to ratios of making the topping that I had to readjust three times to figure out how to do it right.  I don’t know if it was a typo, if it started in grams and was converted wrong or what, but it made so much crumble topping and it had way too much flour to bake in the microwave correctly.  However, third time is a charm, and the adjusted recipe follows.

 I enjoy this little guy because he’s just that, little.  A perfect snack.  In the summer, it’s hard to eat heavy meals or desserts because afterwards you trudge back into the heat.  This light little mug cake let’s you enjoy some apple pie realness, and then move on with your life.

Apple Crumb Mug Cake

Ingredients

For the Mug Cake

  • 1/2 an apple, peeled and diced
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • a pinch of sugar
  • 1 Tbsp water
  • pinch of cinnamon

For the Topping

  • 1 tsp sliced almonds
  • 1 Tbsp oats
  • 1/2 tbsp butter, melted
  • 1 Tbsp sugar
  • 1 Tbsp flour

Instructions

For the Mug Cake

  • Add all ingredients into short microwave safe mug and mix to thoroughly coat apple
  • Microwave for 1min 10 seconds
  • Allow to cool slightly before adding topping

For the Topping

  • Mix all ingredients in a separate small bowl together with a fork and allow it to slightly clump together
  • Sprinkle on top of apples and microwave again for 1 minute
  • Allow to cool before enjoying, mug cake will be very hot!!!
