The Weekend ReTREAT: Coffee Chocolate Mug Cake

There’s something about posting on a Saturday that makes me feel like a rebel, so I’m doing it again. And whether you’re reading this early in the morning, or later in the day, this mug cake is perfect at any time! It has a great coffee chocolate mixture, and you can’t help but love the marbled presentation at the end.  And as you can tell from the brownies I posted yesterday, I love a good marbled look.

This mug cake actually takes a little more effort, using more than just one mug to stir everything together, but I think you’ll make it through. Coffee Chocolate Mug Cake | Domestic Batch

Chocolate Coffee Mugcake

Ingredients

  • 1 oz butter, melted
  • 2-3 large squares of dark chocolate, melted
  • 1 egg
  • 2 Tbsp sugar
  • 1 tsp vanilla extract
  • 4 tsp light cream
  • 5 Tbsp flour
  • 1/2 tsp baking powder
  • 1 tsp instant coffee

Instructions

  • In a small bowl, mix together egg, sugar, and vanilla by beating with a fork until combined
  • Add in cream, flour, baking powder and butter one by one, beating in each before adding the next
  • In the bowl with the melted chocolate, add in the instant coffee and half of your previous mixture and beat together
  • Alternate spooning the two mixtures into a microwave safe mug, using the tip of a knife to swirl chocolate at on the top
  • Microwave for 1 minute 40 seconds
  • Allow to cool slightly before enjoying
