Mini-Post: Orange Creamsicle Truffles

Did you get the memo? It’s the end of times. We’ve all had a good run right? It’s been fun. 

Kidding.

But if you’re living in NYC (is all up north the same right now? I haven’t been paying attention), it does NOT feel like Christmas time.  It feels like April. No matter your politics or opinions, you cannot deny the weather is not normal and is definitely warmer than usual this time of year for us here in Manhattan.  Don’t get me wrong, I am LOVING it, but it is a bit strange.

I’m hosting a small gathering tonight with just a few friends to watch A Very Murray Christmas and drink and catch up. And despite the fact this get together is small, that doesn’t mean I can’t use it as an excuse to make way too many desserts for it.

That being said, over the next two weeks I will have a few posts that are just recipes, no outfit attached.  I have some time to make desserts, and wear some clothes, but not time (or enough daylight) to take pictures and coordinate both.  But I don’t want to deprive you of the delicious things I’m making over the holidays. So my first mini post is the delicious orange creamsicle truffles that are in my fridge right now for the party. Another easy go-to if you’re in a bind to bring something to a party that’s a little different and just delicious.

Spelling errors in this? Shocking, I wrote it in 15 minutes while I wait for my butter to soften for a much bigger project which will be shared soon.

Orange Creamsicle Truffles

Ingredients

  • 1/4 cup butter
  • 1/2 cup heavy cream
  • 1 1/3 cup white chocolate chips
  • zest from 1 orange
  • 1 Tbsp orange extract
  • powdered sugar for rolling

Instructions

  • Pour white chocolate chips into bowl, set aside
  • In a small saucepan, melt butter along with orange zest
  • Add heavy cream and bring to just below a boil
  • Pour over white chocolate chips, let stand for 1-2 minutes
  • Add orange extract and whisk together until smooth
  • Place in refrigerator for at least two hours to become a soft solid, it should have hardened, but also allows a small imprint if you push your finger on it
  • Sprinkle a small amount of powdered sugar in a bowl
  • Take out bowl from fridge, scoop small amount and roll into a ball, then roll gently in sugar, shake off excess
  • Place truffles in freezer for about 15 minutes to set, then keep chilled until ready to serve

P.S.

*Is it too soft? White chocolate has more fat content, it can be tricky, simply pour some more chips into the semi sold mix, melt it in the microwave in short 20 second bursts until the new set of white chocolate chips are melted in, stir to combine and reset in fridge
