It’s already Friday, so you deserve some cake. Cake for one, don’t share it. We’re weeks into this and this is the first cake involving chocolate. About time. Not only is this mug cake delicious, it’s pretty! The chocolate and vanilla marbled design in your cup gives you a little piece of art to enjoy before scarfing it down as you eat your feelings from the past week? I’m not the only one who uses these as an escape, am I?
I had chunks of hazelnuts in mine because I was not interested in using my food processor to break up only 2 tablespoons of anything. I lightly took a hammer to the bag and broke them up. I like the crunchiness anyway.
I have to skip the next mug cake in the book because it involved Carambars. Since this Mug Cake book is clearly from across the pond, I have yet to see these caramel treats in a grocery store. If anyone spots them will you let me know? I’ve looked in some international aisle’s but have come up with nothing. If I find some later, I’ll always come back to it.
Enjoy your marbled mug cake, and don’t forget to finish off the rest of that chocolate bar you didn’t use. You deserve it.
Marbled Mug Cake
Ingredients
- 1 oz butter, melted
- 3 squares of chocolate, melted (I used Godiva)
- 1 egg
- 3 Tbsp sugar
- 1/2 tsp vanilla extract
- 1 Tbsp light cream
- 2 Tbsp ground hazelnuts
- 5 Tbsp flour
- 1/2 tsp baking powder
Instructions
- In a BOWL, beat together egg, sugar, and vanilla extract with a fork
- [You should now have three separate bowls, one of melted butter, one of melted chocolate and one for all the other ingredients]
- One by one, add cream, hazelnuts, flour and baking powder to the egg mixture, beating in completely before adding the next
- Pour in melted butter to mix and beat in
- Pour 1/3 of this mixture into melted chocolate and mix together
- Alternate spooning in mixtures, chocolate and non, into a microwave safe mug, preferably ending with chocolate mixture
- Take a knife and swirl around batter to create marbled design
- Microwave for 1 minute 50 seconds
- Allow to cool slightly before enjoying
