Hello weekender! It’s been a long week, don’t you agree? The cold makes the days seem endless and you need a little cake in your life. Well don’t fret, this weeks mug cake is delicious and refreshing, just the pick me up you need for a great jumpstart to the next two days!

Orange Mug Cake
Ingredients
- 1 oz of butter, melted
- 4 Tbsp white granulated sugar
- 1 egg
- 1/2 tsp vanilla extract
- 2 Tbsp orange juice
- 2 tsp light cream
- 4 Tbsp AP flour
- 3 Tbsp ground almonds (almond flour)
- 1/2 tsp baking powder
- 2 tsp chocolate chips
- Nutella (for topping, optional)
- Orange zest (for topping, optional)
Instructions
- In a microwave safe mug, add sugar, egg and vanilla extract and beat together with a fork
- One by one, add in orange juice, light cream, flour, ground almonds, baking powder, melted butter, and chocolate chips, beating in each before adding the next
- Cook in microwave for 2 minutes
- Allow to cool slightly, then spread Nutella on top and sprinkle with orange zest
P.S.
*I took a page out of a friends book who made one of my mug cakes and added Nutella on top, I think getting creative with these topping is the way to go.
