Happy Friday! Remember when I said I had all these great posts from snowpocalypse and then posted NOTHING? Fun right? Well they’re coming, I promise. But let’s stay consistent with another mug cake.
And in a Dharma Initiative mug no less. (The Constant will always be the best episode amiright?)
Happy Weekend!!!!
Pear Mug Cake
Ingredients
- 1 oz butter, melted
- 1 egg
- 2 Tbsp granulated white sugar
- 1 tsp vanilla extract
- 1 Tbsp light cream
- 6 Tbsp AP flour
- 1/2 Tbsp baking powder
- 1 Tbsp sliced almonds
- 1/2 pear peeled and deseeded
Instructions
- Place half of pear in a small bowl with 1 tbsp of water and cook in microwave for 1 minute 10 seconds, set aside
- Melt butter in microwave, set aside
- In a microwave safe mug, add egg, sugar and vanilla and beat together with fork until combined
- Add cream, flour, baking powder, almonds and butter, one at a time, beating each in before adding the next
- Take your half pear and push it into the middle of the batter, sprinkle more sliced almonds on top
- Microwave for 1 minute 40 seconds and allow to cool slightly before enjoying
P.S.
*I chose not to top this guy, but feel free to do icing, Nutella, or melted white chocolate on top
*I think this cake is a little bit of a cop out, if you want to make it a little more intense, I would recommend shredding the pear on a cheese grater and adding it in last (beating it into the batter) before microwaving, so the pear is easier to obtain in each delicious forkful
