Your favorite dessert for one series is back! I wanted to share this cake last week, but as I said in my last few posts, last week just got away from me. So here is the super fluffy and moist yogurt cake! It’s pretty basic, subbing out the light cream for yogurt, but it is so tasty. I decided not to top it off with anything, but a fruit jam would be lovely on this.
This post is short and sweet, just like a mug cake! I’m baking up a storm this weekend to celebrate my husbands birthday and I can’t wait to share! Cheerio folks, have a lovely weekend!
Yogurt Mug Cake
Ingredients
- 1 oz butter, melted
- 4 Tbsp sugar
- 1 egg
- 1 tsp vanilla extract
- 3 tsp plain yogurt
- 6 Tbsp flour
- 1/2 tsp baking powder
Instructions
- In a microwave safe mug, add sugar, egg and vanilla and beat until combined with a fork
- One by one add yogurt, flour, baking powder and melted butter beating in each before adding the next
- Microwave for 1 minute 50 seconds, allow to cool slightly before enjoying

*This is a great basic mug cake to experiment with, like adding a tsp of cinnamon or 1/2 tbsp chocolate chips
