And just like that it’s Friday! And I have a delicious Mug Cake for you. Now you look at this title and you’re like, what What WHAT is a financier??! Fair question, I didn’t know myself. Well kiddos, it’s a traditional cake that is spongey and moist (there’s egg whites in there) and uses almond flour and has a nutty flavor. Also adding ground hazelnuts in this recipe adds more fat to the cake and makes it super soft. The extra touch of having white chocolate in the middle doesn’t hurt. I scraped the mug clean on this one too. Financier’s were named so because traditionally they are created in a rectangular shape, which looked like gold bars.
And there you have it! Yet another super easy way to treat yourself this weekend! Enjoy spring, chickens! It is finally upon us!
Financier Mug Cake
Ingredients
- 1 oz butter, melted
- 2 Tbsp confectioner’s sugar
- 3 Tbsp flour
- 2 Tbsp almond flour
- 1 Tbsp ground hazelnut
- 1/4 tsp baking powder
- 1 egg white
- 3 squares of white chocolate (I used one Lindt truffle)
- a few hazelnuts roughly chopped for garnish
Instructions
- In a microwave safe mug, add in all ingredients except the white chocolate and beat with a fork, mixing thoroughly
- Once combined, push white chocolate into the middle of batter
- Microwave for 1 minute 30 seconds
- Allow to cool slightly before garnishing with extra hazelnuts and enjoying
