Happy Friday the 13th!!! Whoa!!! Watch out for those cracks in the sidewalk, black cats, random ladders, and weird people who are just WEIRDER! I’m not a superstitious person, but there is something in the air on Friday the 13th’s, everything can seem just a little off. You might as well just hole yourself up and make a mug cake to stay safe from it all.
This is another delicious chocolate cake, except that you get a melty surprise when you eat it. I think I’m in love with these chocolate mug cakes because when you want a chocolate fix, they’re just enough to satisfy without feeling too guilty, like you ate a whole box of Oreo’s guilty. (Oof, college anyone??)

Melt in the Middle Mug Cake
Ingredients
- 1 oz butter, melted
- 1 egg
- 4 tbsp sugar
- 1 tsp vanilla
- 2 tsp light cream
- 2 1/2 tbsp unsweetened cocoa powder
- 6 Tbsp flour
- 1/2 tsp baking powder
- 2-3 small squares of chocolate, or one large (i.e Ghirardelli) square
Instructions
- In a microwave safe mug, add in egg, sugar and vanilla extract, beating with a fork to combine
- One by one, add in light cream, flour, cocoa powder, baking powder and melted butter, beating in each before adding the next
- Take the chocolate square(s) and press into the middle of the batter
- Microwave for 1 minute 20 seconds
- Allow to cool slightly before enjoying
