Weekend Cobbler

Happy Hump Day! The week is halfway over! You’re making it! It is frigid in NYC, FRIGID! Temperatures are in the teens when the sun is down and the gusts that hit your face make you hate everything and question all your life choices. So what better option to bake than something you can basically eat all day long while you refuse to step out into the winter bitter hateful angry cold?

A cobbler.

It started as a slept-in-we’ve-hit-brunch-time type of thing. And ended up as a snack for most of the day as we laid on the couch and accomplished nothing (well almost nothing, we’ve almost completed all of GOT). I made a pear and apricot cobbler, and while I used it for breakfast, I think it’s an even better dessert, served a la mode or with homemade whipped cream on top.

 I think I’ve been reluctant to use pears this season, but this cobbler has proven that I need to branch out and utilize it more. It was the best way to start the day.

While we stayed in all of Sunday, but I was a busy bee on Saturday, and we snapped a few photos.

Suede has definitely been a trend this season, so I snatched an inexpensive piece from Forever 21, knowing that the trend would likely end with this winter.  That way if I wear it only three times until May, I feel like I got my use out of it.

I have also fallen in love with paring black with camel, I don’t know why this color combo strikes me, but I love it, and will be using it through the next couple of months.

And when you want to splurge on a piece for your closet, a great, fitted leather jacket is ALWAYS a good choice.  This leather jacket has been a part of my closet since early college years, on mega sale from the GAP. Considering my 10 year college reunion will be sooner rather than later, I’d like to think this jacket was a great purchase that I continue to pull out every year.

Pear & Apricot Cobbler

Ingredient

For the Filling

  • 4-5 pears, peeled, cored, and sliced
  • 4-5 cups (about 10 small apricots) of a apricots, pitted and quartered
  • 3 Tbsp cornstarch
  • 2 Tbsp lemon juice
  • 1 1/2 tbsp cinnamon
  • 2 tsp nutmeg
  • 3 Tbsp brown sugar

For the Topping

  • 1 stick (1/2 cup) of unsalted butter, very cold
  • 2 cups AP flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 2 eggs, lightly beaten
  • 1 tsp vanilla

Instructions

  • Preheat oven to 400 degrees
  • Place sliced pears into a large bowl, pour lemon juice over and toss gently, to avoid browning
  • Pour in apricots, corn starch, cinnamon, and nutmeg and toss gently to combine and evenly coat all the fruit
  • Pour into cast iron skillet and sprinkle brown sugar over filling
  • Heat on stove over medium-high for 3-5 minutes, you should just begin to smell the fruit and cinnamon
  • While fruit it warming, make crumble topping
  • In a large bowl, whisk together flour, sugar, baking powder, and salt until fully combined
  • Cut in butter with a pastry cutter or fork until small beads are formed throughout
  • Add vanilla and then eggs, gently tossing together with your hands until the dough begins to come together
  • Sprinkle topping evenly over fruit
  • Baking for 17-20 minutes, until topping begins to slightly brown
  • Allow to cool slightly before serving, but this is beat enjoyed warm
