Congrats! You made it through another week! In adult life, that can be quite an accomplishment. I know for me it feels like this week has gone on forever. With Phil out of the country for work, and battling this flu/sinus thing/I-must-sleep-for-hours bug, I’m ready for the weekend. Or more so, I’m ready to start a new week where I blow my nose less, and am awake and up and running more. I did manage to make a delicious mug cake to share with you, and anything with gooey caramel, and a little salt to even out the sweet is always acceptable.  And as I’m sure you’ve noticed, the Mug Cake book I’m going through, clumps similar things together.  So I think you have to survive through two more chocolate themed mug cakes and then we’re in the clear. You mad?

I love salted chocolate things.  My Salted Caramel Tart (one of the first things I ever posted here) is still something I love to make, and may dream about from time to time. I definitely replaced salted caramels in this recipe, which I couldn’t specifically find, with regular caramel candies and adding a pinch of salt.  The result was just as delicious.

Get salty and sweet this weekend with a mug cake! I’ll be making a fruity spring layer cake this weekend for my friend’s baby shower, and I cannot wait to share it with you! (Unless I blow it, and then you get NOTHING!)

Salted Caramel Mug Cake

Ingredients

  • 1 oz butter, melted
  • 3 Tbsp sugar
  • 1 egg
  • 1 Tbsp light cream
  • 2 Tbsp cocoa powder
  • 6 Tbsp flour
  • 1/2 tsp baking powder
  • 3 salted caramel candies (or 3 caramels and a pinch of salt to taste)

Instructions

  • In a microwave safe mug, beat together egg, sugar, and light cream with a fork until combined
  • One by one, add in cocoa, flour, baking powder, and melted butter, beating in completely before adding the next
  • Cut the caramels in half and stick into batter (adding in salt if using), mix so caramels are distributed relatively throughout
  • Microwave for 1 minute 30 seconds
  • Allow to cool slightly, top with extra salt if desired and enjoy
